First, we want to provide fair and consistent wages for all of our staff. Working for tips means that some shifts are good for your favorite server and some slow shifts barely bring in minimum wage. In order for our staff to live healthy and secure lives, we provide them with a fixed and dependable income.
That title might be a bit surprising, given that we’re usually all about reducing, reusing and recycling over here. Don’t worry, we haven’t changed our tune. In my own life, I’ve been thinking about how I can maximize and get more use out of what I have. I’m trying to be creative in how I apply the concept.
The Jewish High Holidays just happened and every year my friend and I pick our own word to be our focus for the year. Mine is, you guessed it, maximize! I can tell it’s the right one for now because when I talk about it, I get the chills.

Read MoreThe inside of the café is full of people browsing the menu, ordering, waiting or admiring the hand-painted ceiling. Bridget Daly walks up to the worker’s window on Wrightwood Avenue and orders a coffee, chatting with the barista as she pays and takes the hot drink.
“It’s great to have a place to get a great cup of coffee in the neighborhood that’s not a Starbucks,” said Daly, a resident of Logan Square.
Located at 3624 W. Wrightwood Ave. in Logan Square, Kate Vrijmoet’s coffee shop, necessary & sufficient, officially opened Oct. 24 offering coffee, specialty drinks and food from local vendors and housing Vrijmoet’s art studio behind the café space.

All menus are printed in English and Spanish and you also have the option of adding CBD to your drink. If you’re surprised that your cup is smaller than what you’d get at Starbucks, it’s because Vrijmoet is using proportionally correct cups, meaning your espresso drink won’t be diluted by additional milk or water.
